The University of Batangas (UB) College of Business, Accountancy and Business Management (CBAHM) Dean Dr. Erwin M. Lumanglas, together with faculty members Ms. Erica B. Ramirez, Ms. Sofia April H. Hernandez, Mrs. Shiela C. Posugac, and Mrs. Cyrene M. Catimbang, successfully published their research in the International Journal Environment Sciences (IJES) – a Scopus-indexed journal in July 2025.
Their paper titled “Batangas Kakanin Making: Tracing Food Heritage and Culture Towards Sustainability”, explores the preservation of traditional recipes and cooking techniques as globalization continues to challenge traditional culinary practices. The study also emphasizes the importance of sustaining Batangas cuisine as a vital expression of cultural identity.
The paper’s findings enhance awareness of local ingredients, nurture collaboration between culinary artisans and agricultural producers, and promote educational programs that significantly contribute to the sustainability of Batangas’ culinary landscape. The researchers underscore the importance of molding the cultural identity through preservation of traditional culinary practices. The value of the study aims to guide policymakers, culinary professionals, and Batangueño community leaders to solidify the resilience of traditional food practices in Batangas and beyond.
